I'd add some more expressions:
- I'm sorry, and I'm not gonna do it again.
- I'm sorry, and I'll do it no more.
- I'm sorry, and I won't do it any longer.
- I'm sorry, and I'll never do it again.

This is very usual spoken English, but when you put it in writing, don't forget to use the conjunction "and" or "but", because you can't connect two complete sentences simply with a comma.

If you really must, just put a period (full stop) after "sorry". An "and" or a "but" changes the whole meaning somehow. (Not significant, but it's there)

It just so happens that someone asked a similar question over alt.usage.english:

This is one of those dialogue-writing problems. I wouldn't use a comma unless the "sorry" were followed by "but". Without the "but", I'd say the comma should be a period (full stop), not a semi-colon.

Yes, I'd say that there's no significant grammatical difference between the two despite the second one's having a subject and verb in front of the "sorry". "Sorry" and "I'm sorry" are both complete sentences in dialogue. The first is elliptical; the second, complete.

Professional writers, however, will use the comma in both cases, and no one will complain. It's only when there's no comma that a problem of meaning, stress, and intonation arises.
